This coffee comes from Huila, Colombia, produced by Cecilia Gómez, and begins its life as a naturally processed coffee, dried with the fruit (skin) intact to enhance sweetness and fruit complexity.

 

To preserve those natural characteristics, the coffee is decaffeinated using the Sugar Cane EA (Ethyl Acetate) process, derived from Colombian sugar cane. This method gently removes caffeine while maintaining the coffee’s original flavor structure—no harsh chemicals, no compromise.
